Carrot and Walnut Muffins

Thanksgiving is just around the corner! If you’re looking for a healthier way to indulge this season, I’ve got you covered with these Thanksgiving-inspired carrot Walnut Muffins. Perfect for a festive breakfast, a light snack, or even a crowd-pleaser on your holiday dessert table.

These muffins are packed with warm spices, naturally sweet carrots, and crunchy walnuts, making them a guilt-free treat that still feels like a cozy indulgence.

Ingredients

Serving Size: ~12 muffins

  • 1 1/2 cups spelt flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp ground cinnamon

  • 1/4 tsp ground nutmeg

  • 1/4 tsp salt

  • 2 large eggs

  • 1/2 cup unsweetened applesauce

  • 1/4 cup melted coconut oil

  • 1 tsp vanilla extract

  • 1 1/2 cups grated carrots

  • 1/2 cup chopped walnuts

Instructions

Preparation:

  1. Preheat your oven to 350°F (175°C).

  2. Line a muffin tin with paper liners.

  3. In a large bowl, whisk together the spelt flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

  4. In another bowl, whisk the eggs, applesauce, melted coconut oil, and vanilla extract until well combined.

  5. Fold the grated carrots and chopped walnuts into the wet ingredients.

  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

  7. Evenly distribute the batter into the muffin tin, filling each cup about 3/4 full.

  8. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
