Chickpea Tortillas

This is a staple that my mother-in-law taught me a little while ago. This delicious, low-calorie, gluten-free, high-fiber, and protein-packed side dish is traditionally called Besan Cheela.

Ingredients (Serving 2):

  • 1 cup chickpea [besan] flour: I use this one!

  • 1/2 cup water

  • 1/4 tsp salt

  • 2 tsp Kashmiri chili powder [or another chili powder]

  • 1 tsp cumin powder

  • 1 tsp coriander powder

  • 1 tsp turmeric powder

  • A drizzle of olive oil

  • Dosa pan [flat pan]: I have this one!

  • Ladle

Instructions:

  • Mix chickpea [besan] flour and water in a bowl, then add spices.

  • Heat the dosa pan to medium, and pour on the batter. Use the bottom flat part of the ladle in a circular motion to spread the batter onto the pan.

  • When the side starts to cook and turn lightly brown, drizzle olive oil, flip the tortilla over, and brown the other side.

The best part of this recipe is that the batter can last 2-3 days in the fridge!
