Citrus Salmon

My favorite way to get omega-3s!

Before I bring this week’s recipe, I want to take a moment to wish all the mothers out there, in every beautiful form, a very Happy Mother’s Day! I hope your day was filled with love, joy, and everything that makes you feel celebrated and loved.

This past weekend in NYC was absolute perfection. After what felt like an endless stretch of rain, the sunshine returned, and the spring energy is upon us!

And you know what that means — citrus season is officially here! My weekly farm box has been bursting with lemons, oranges, grapefruits, and limes. I’ve been finding any excuse to use them — from flavoring my water, to brightening up dishes, or enjoying them as a quick snack.

Inspired by the citrus season, I decided to pair them with one of my favorite proteins: salmon. This week’s recipe is simple, but it highlights the tartness of citrus and the richness of salmon. It’s fresh, tasty, nourishing, and perfect for a spring dinner. I love cooking salmon because it’s packed with Omega-3 fatty acids — essential nutrients that support brain function, mood balance, and overall health. And by adding citrus fruits, you are helping to boost your immune system and support healthy hair, skin, and nails.

This recipe is quick enough for a weeknight, but also fun enough for a weekend dinner party!

Ingredients:

  • 1 lemon, thinly sliced

  • 1 lime, thinly sliced

  • 1 grapefruit, thinly sliced

  • 1 red onion, thinly sliced

  • 1.5 pounds of wild-caught salmon

  • Sea salt and freshly ground black pepper, to taste

  • Olive oil & butter, for drizzling/topping

Instructions:

  1. Preheat your oven to 400°F (200°C).

  2. Line a baking pan with foil and lay the red onion slices evenly across the bottom.

  3. Place the salmon fillet on top of the onions.

  4. Season the salmon with salt and pepper to taste.

  5. Layer the lemon, lime, and grapefruit slices over the salmon.

  6. Drizzle a light coating of olive oil on top.

  7. Bake for about 20 minutes, or until the internal temperature of the salmon reaches 145°F (63°C).

  8. Serve with a seasonal vegetable like sautéed kale, roasted asparagus, or steamed spinach.
