Fennel Avocado Salad
Fennel is an underrated vegetable. I love its crisp texture and subtle anise-like taste. It adds a refreshing crunch to salads and dishes. Fennel is rich in vitamins and antioxidants. It supports digestive health, boosts immunity, and promotes overall well-being.
Recipe below:
Ingredients:
1 medium fennel bulb and stalk, washed and thinly sliced
1 ripe avocado, diced
2 tomatoes on the vine, washed and halved, and sliced
¼ cup fresh dill, washed and chopped
¼ cup fresh basil, washed and chopped or torn
Juice of 1 lemon
¼ cup olive oil
1 tablespoon whole-grain mustard
Salt and pepper to taste
Instructions:
Thinly slice the fennel bulb and stalk.
Dice the avocado.
Halve and slice the tomatoes on the vine.
Combine the sliced fennel, diced avocado, and tomato slices in a large bowl.
Whisk together the lemon juice, olive oil, mustard, dill, and basil in a small bowl. Season with salt and pepper to taste.
Drizzle the herb dressing over the fennel, avocado, and tomato mixture.
Gently toss to combine and enjoy
