Mango Chia Pudding

A protein powered breakfast and/or snack!

Okay, now onto the recipe!

During a call this week, one of my clients asked me what she could meal prep for a high-protein breakfast or snack that would actually keep her satisfied. I immediately thought of this mango chia pudding!

Not only is it quick and easy, but it’s also a fantastic way to get 30–40 grams of protein when paired with another protein source in your morning routine. Each jar has about 13 grams of protein and 8 grams of fiber — not to mention it’s packed with phytonutrients, healthy fats, and essential vitamins like C and B6.

This is the kind of nourishment that keeps your energy steady, your mood balanced, and those mid-morning cravings in check.

Ingredients:

  • 2 cups frozen mango

  • 1 cup almond milk

  • 1/4 cup walnuts

  • 1 scoop spirulina powder

  • 2 scoops of protein powder (I use Sun Warrior!)

  • 8 tbsp chia seeds (2 per serving)

Instructions:

  • Blend everything (except chia seeds) until smooth.

  • Divide into 4 jars, stirring in chia seeds.

  • Let it sit for 15 minutes, stir again, then refrigerate overnight.
