Roasted Cauliflower Steaks with Lemon-Turmeric Tahini Dressing

I just returned home from spending time in India, visiting family, and exploring this incredible country. One of the things I love most about traveling there is the deep connection between food and wellness.

One of the most cherished spices in Indian cooking is turmeric. It is used in nearly every dish and celebrated for its balancing properties and long-standing role in holistic health. Inspired by my travels, I wanted to share this simple yet nourishing Cauliflower Steak recipe with a creamy lemon turmeric tahini dressing.

This dish is easy to prepare, flavorful, and filled with ingredients that support balanced overall well-being! I hope you enjoy it!

Ingredients:

For the Cauliflower Steak Marinade:

  • 2 tbsp of melted coconut oil

  • 1 tbsp fresh lemon juice

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • 2 minced garlic cloves for a fresh kick

  • 1 tsp ground coriander

  • 1/2 tsp ground turmeric

  • 1/2 tsp onion powder

  • 1/2 tsp sea salt

  • 1/2 tsp black pepper

For the Dressing:

  • 1/4 cup tahini

  • 2 tbsp fresh lemon juice

  • 1 tbsp extra virgin olive oil (EVOO)

  • 1/4 tsp ground turmeric

  • 1/4 tsp sea salt

  • 1/4 tsp black pepper

  • 2-3 tbsp water (to thin as needed)

Toppings:

  • 1/4 cup pomegranate seeds

  • 1/4 cup chopped pistachios

  • 1 tablespoon finely chopped fresh mint

  • 1 tablespoon finely chopped fresh cilantro

Instructions:

  • Mix all the cauliflower steak marinade ingredients in a small bowl until well combined.

  • Slice the cauliflower into 1-inch steaks from the center, reserving the smaller florets for another use.

  • Brush the marinade over both sides of the cauliflower steaks and let them sit for at least 15 to 20 minutes.

  • Preheat the oven to 400°F and line a baking sheet with parchment paper.

  • Place the cauliflower steaks on the prepared baking sheet and roast for 20 to 25 minutes, flipping halfway through, until golden and tender.

  • While the steaks are roasting, prepare the dressing by whisking together the tahini, lemon juice, olive oil, turmeric, salt, and pepper. Add water, one tablespoon at a time, until the dressing reaches your desired consistency.

  • Once the cauliflower is done, drizzle the lemon-turmeric tahini dressing over the steaks.

  • Sprinkle with pomegranate seeds, chopped pistachios, mint, and cilnatro before serving.
