Sweet Potato Chips and Whipped Goat Cheese Bites

I’ve been looking for ways to create simple but healthy appetizers this holiday season. I had previously heard of using sweet potatoes as a base chip, so I adapted this idea for the perfect holiday treat.

Ingredients

  • 2 large sweet potatoes, thinly sliced

  • 2 tbsp olive oil

  • 4 oz goat cheese

  • 2 tbsp almond milk

  • 1 tsp fresh thyme or favorite herbs

  • 1/4 cup chopped walnuts

  • 1/4 cup pomegranate seeds

  • Balsamic glaze

  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F. Toss the sweet potato slices with olive oil, salt, and pepper, then spread them on a baking sheet in a single layer. Bake for 20-25 minutes, flipping halfway, until crispy.

  2. While the chips bake, blend the goat cheese, almond milk, and thyme in a bowl or food processor until smooth and creamy.

  3. Once the chips are out of the oven and slightly cooled, spread the whipped goat cheese on each chip.

  4. Top with chopped walnuts and pomegranate seeds, then drizzle with balsamic glaze.

  5. Serve immediately and enjoy this easy, festive treat!
