Watermelon Salad

I’ve been saying it all summer to anyone who will listen to “I’m OBSESSED with Watermelon.”

During this time of year, I stand by my statement because it’s packed with hydration, rich in vitamins like A and C, and contains potassium and magnesium, making it a natural electrolyte. It assists in heart health, is an antioxidant, and promotes healthy skin.

So, in honor of my favorite summer fruit, here is a delicious watermelon salad!

Ingredients:

  • Half a medium-large watermelon

  • 1 burrata ball

  • ¼ cup fresh mint leaves

  • ¼ cup fresh basil leaves

  • Juice from half a lemon

  • 2 tbsp EVOO (extra virgin olive oil)

  • Pinch of salt and pepper

Instructions:

  1. Cut the watermelon into bite-sized cubes and place them in a large bowl.

  2. Gently tear the burrata ball into pieces and add these to the large bowl.

  3. Thinly slice or chop the fresh mint and basil leaves. Add these to the large bowl.

  4. Whisk together the lemon juice, olive oil, salt, and pepper in a separate small bowl.

  5. Drizzle the lemon olive oil dressing over the salad.

  6. Gently toss the salad to combine all the ingredients. Serve immediately or chill briefly before serving.
